You’ve probably caught on to my gourd obsession by now. Pumpkin is rated number one, spaghetti squash and acorn squash are tied for second. Sorry Zucchini, but you really just serve as a seasonal replacement.

Saute your zucchini in olive or avocado oil then cook some rice or pasta and add that can of tomato sauce that has been sitting in the back of your pantry for months. Add the three ingredients together once everything is cooked/heated and spice as desired.
